Valentina Passalacqua is an organic farm located in northern Apulia, on the slopes of the famous Gargano National Park. The winery cultivates 80 hectares following the biodynamic philosophy, partly espalier or bush-trained, and produces Negroamaro, Primitivo, Aleatico, Nero di Troia, Bombino, Fiano Minutolo, Falanghina, Greco, Montepulciano, Pinot Grigio and Chardonnay divided into three collections. The company's objective has always been the valorisation of indigenous grape varieties, cultivated and vinified using natural methods, and in particular Bombino and Nero di Troia.

Description

One of the most representative red grape varieties of northern Apulia, it lends itself to various and contrasting interpretations. Valentina Passsalaqua offers us her interpretation, which is more direct, straightforward, fresh and very drinkable at the table.

Organoleptic characteristics: 

Intense ruby red in colour, it has scents reminiscent of the autumn scents and atmosphere of the Gargano: cherries in spirit, red flowers, rhubarb and mint. In the background, notes of bitter cocoa. A vigorous wine, with a persistent, intense and enveloping aromaticity. The tannins give character to every sip.

Vinification 

Spontaneous fermentation in open steel vats with 4 days of skin contact.
