In the south of France near the city of Limoux, in the heart of the beautiful region of Languedoc Roussilion - Maison Vergnes, is part of a private label part of Domaines Paul Mas. A marketing man who later became a wine producer, Jean Claude Mas soon immersed himself in the winemaking work of Domaine de Martinolles, one of the estates that make up Domaines Paul Mas, a family-run business for three generations, acquired in 2011, fascinated by the location, the quality of the wines but also by the desire to produce his sparkling wines in a clearly vocated context. By organically managing the vineyards, he creates wines with a great taste profile, with freshness, finesse and complexity.
Description
Viognier, a classic southern French grape variety, comes from small vineyards owned by Domaine Martinolle, scattered over the hills of the Cévennes and Valle de l'Aude.
Organoleptic characteristics:
Brilliant golden yellow colour with hints between green and yellow. The nose is rich and elegant with hints of dried fruit, peach and floral aromas of violets as well as notes of vanilla and honey. In the mouth it is fresh and full with a long, lingering finish characterised by toasty notes.
Storage time:
2-5 years
Vinification
The mechanically harvested grapes are derasped overnight and left in contact with the skins for four hours. Fermentation at a controlled temperature of 17°C for four weeks. The 15% of the wine completes fermentation in oak barrels with ageing in wood for three months. The remaining 85% of the wine matures in steel containers
