In the south of France near the city of Limoux, in the heart of the beautiful region of Languedoc Roussilion - Maison Vergnes, is part of a private label part of Domaines Paul Mas. A marketing man who later became a wine producer, Jean Claude Mas soon immersed himself in the winemaking work of Domaine de Martinolles, one of the estates that make up Domaines Paul Mas, a family-run business for three generations, acquired in 2011, fascinated by the location, the quality of the wines but also by the desire to produce his sparkling wines in a clearly vocated context. By organically managing the vineyards, he creates wines with a great taste profile, with freshness, finesse and complexity.

Description

A very stylish Blanquette de Limoux from Domaine Jean Claude Mas, which comes from the vines of the village of Saint-Hilaire in Limoux, within the borders of the appellation of origin of the same name. Blanquette is a unique product that was already known to the blessed monks of the Abbey of Saint Hilaire in 1531. It is mainly composed of the local Mauzac grape variety and small percentages of Chardonnay and Chenin Blanc grapes. Foaming is achieved by the Metodo Classico, with an expected ageing on the lees of 9 months, the presence of Chardonnay, brings with it the character of clayey limestone soils and the resting period of nine long months before disgorging.

Organoleptic characteristics: 

Intense straw yellow colour, fine and peristent perlage. Perceptions of white flesh fruit of white peach prevail on the nose, followed by citrus touches of citron, bergamot, and orange blossom. On the palate it has an enveloping bubble, with hints of slightly bitter aromatic herbs, nettle and dried bitter almonds. Long fresh savoury finish.
