Description
Produced using the RIPASSO technique deliberately applied more restrictively than the production regulations, it is obtained by repassing the Valpolicella Classico on the marc of Amarone just once, resulting in an authentic wine of terroir.
Organoleptic characteristics:
Intense ruby red in colour, it has hints of red fruit, spices and cocoa on the nose. In the mouth it is warm and soft, well balanced by round tannins. Spicy tones return, well supported by good acidity and the right alcohol content.
Storage time:
5-7 years
Vinification
After manual harvesting, immediate pressing of the grapes and subsequent maceration at a controlled temperature. At the beginning of March, the Valpolicella Classico is repassed over the Amarone marc just once.
