Description
The Sicilian island, part of the Aeolian Archipelago (ancient Didyme from the Greek for 'twins') is so called because the twin volcanoes that characterise it from afar look like female breasts. The grapes used are inzolia and catarratto, both indigenous varieties grown on volcanic soil rich in pumice stone. A decisive expression of volcanic wines resulting from extreme cultivation.
Organoleptic characteristics:
Intense straw yellow colour with flashes of bright, transparent antique gold, good consistency. The nose reveals aromas of Mediterranean scrub along with the fruitiness of citrus and exotic fruit of great finesse. The taste is fresh and immediate with good persistence and flavour.
Storage time:
2-3 years
Vinification
Pre-cooling of the grapes, then light skin contact. Immediate draining and fermentation in temperature-controlled steel tanks.
