Description

Ancestrale Blanc de Blancs Metodo Classico Brut is a sparkling wine obtained from a blend of white grapes in one of the most vocated areas of the Oltrepò Pavese for vine cultivation. Fermentation takes place spontaneously, using only indigenous yeasts and without temperature control.

Organoleptic characteristics: 

Straw yellow colour with golden mustard hues. The nose opens on aromas of orange blossom, white flowers, citrus, yellow fruit, acacia honey and bread crust. The attack on the palate is rich and ample with dense, satisfying fruit that stretches towards a finish of lovely mineral freshness.

Storage time: 

1-3 years

Vinification 

After harvesting, the grapes are gently pressed. The must is put into tanks where spontaneous fermentation begins. With the first winter cold, when the sugar residues in the must are around 30 grams per litre, fermentation slows down. In spring, the must is bottled and with rising temperatures, fermentation gradually starts again. Indigenous yeasts transform the last residual sugars into a sparkling wine with fine, persistent bubbles. During disgorging, the bottles are topped up with the same wine without adding anything.
