Viticulture has always been a family tradition in that of Filippo Cassano, owner and oenologist, who has always been aware of the potential of primitivo in his area. Thanks to the experience of his father Vincenzo and his schooling at the 'Basile Caramia' school of oenology in Locorotondo, Filippo has focused on pure winemaking, exalting the indigenous and the territorial recognisability of Apulia. Situated between Acquaviva delle Fonti and Gioia del Colle, Polvanera is immersed in a unique landscape of vineyards, dry stone walls and oak barrels.
The unusual and characteristic wine cellar is dug 8 metres into the limestone rock. The structure allows the wines to age at a constant temperature, combining utility and beauty. Attached is a historic farmhouse from 1820 with a rustic feel, used for hospitality.
The farm is located in a very strategic area of Apulia for tourism: it is twenty minutes from both the Itria Valley and Matera. The grape harvest takes place in the first ten days of September. Modern pressing and winemaking facilities contribute to the realisation of the Bio proposal. Together with his precious collaborators and the support of his family, Filippo Cassano continues to pursue an ambitious project, aimed at enhancing the value of primitivo and other indigenous vines, continually exalting the quality of his products.

Primitivo 100% area of production Vigneto Marchesana, Gioia del Colle
Organoleptic characteristics:
Deep ruby red colour with violet hues.
Intense aromas of small black fruits (blackberry, black cherry, ripe cherry) with delicate floral (violet) and vegetal (wild mint) notes
Full, long and velvety taste that is rounded off by a pleasantly almondy finish
Vinification
In stainless steel tanks for 7 days at a temperature of 25°C
