Viticulture has always been a family tradition in that of Filippo Cassano, owner and oenologist, who has always been aware of the potential of primitivo in his area. Thanks to the experience of his father Vincenzo and his schooling at the 'Basile Caramia' school of oenology in Locorotondo, Filippo has focused on pure winemaking, exalting the indigenous and the territorial recognisability of Apulia. Situated between Acquaviva delle Fonti and Gioia del Colle, Polvanera is immersed in a unique landscape of vineyards, dry stone walls and oak barrels.
The unusual and characteristic wine cellar is dug 8 metres into the limestone rock. The structure allows the wines to age at a constant temperature, combining utility and beauty. Attached is a historic farmhouse from 1820 with a rustic feel, used for hospitality.
The farm is located in a very strategic area of Apulia for tourism: it is twenty minutes from both the Itria Valley and Matera. The grape harvest takes place in the first ten days of September. Modern pressing and winemaking facilities contribute to the realisation of the Bio proposal. Together with his precious collaborators and the support of his family, Filippo Cassano continues to pursue an ambitious project, aimed at enhancing the value of primitivo and other indigenous vines, continually exalting the quality of his products.
Description
Obtained from 100% Primitivo grapes from the San Benedetto Vineyard, Acquaviva delle Fonti, which is organically farmed where the bush-trained vines are over 70 years old. The grapes are harvested when over-ripe on the vine so as to achieve maximum sugar concentration. An excellent complex and elegant sweet wine.
Organoleptic characteristics:
Deep purple red colour, sparkling with ruby reflections. Elegant aromas of black cherry, blackberry, plum, cherry, plum, carob and dried fig, with delicate floral, rose and herbaceous, thyme, wild mint, enhanced by hints of liquorice and marzipan. Sumptuous, velvety, finely sweet taste, supported by caressing tannins and a vivid acid-mineral current. Very long, satisfying finish, in perfect correspondence with the nose
Storage time:
3-7 years
Vinification
Maceration for 3 weeks.Fermentation in stainless steel tanks for 3 weeks at a temperature of 25°C.
