Seven friends with a passion for fermentation and an abandoned farmhouse to be recovered with more than seven hectares of land, once used as a stable and milking parlour. Thus was born the La Cattiva project, in Sammichele di Bari, natural wines and a great desire to experiment. The vineyards are all owned by Marianna Pastore Bovio, also part of the project. All the plants are organic, no treatment other than sulphur and copper, totally manual processing and local vines such as Primitivo, Negroamaro, Aleatico, Montepulciano, Aglianico and Trebbiano. No selected yeasts, but carefully monitored spontaneous fermentation. No addition of sulphur dioxide and intense controls on temperature and plant cleanliness. The idea of the 'naughty' labels created by various artists also proved to be a great success.
Description
The grapes for the production of 'La Spettinata' come from the Sammichele vineyard and are vinified in white. 100% Trebbiano pugliese, this is a Pètillant Naturel' or Pet Nat from natural fermentation. A white of great freshness and endowed with fragrant and mineral notes.
Many of the wines will be a little outside the box, they will escape easy categorisation, some will be difficult to understand, but ultimately they will be unique.
Organoleptic characteristics:
Deep golden yellow colour, naturally veiled
Fragrant, citrusy aromas with puffs of pink grapefruit and yellow flesh fruit.
Surprising freshness and persistence on the palate

2-3 years
Vinification
Once vinified, they leave the 30% grapes on the skins for a weekend, then press them and leave the wine to mature in a steel vat for 6 months.
Zero added sulphites in its spontaneous fermentation in steel, and no other additives. It seems shy but is agile and direct in bringing out its character thanks to its excellent acidity.
