The story of the Poli family of Schiavon
is the story of many families from the Veneto region who settled on the Asiago plateau in the late Middle Ages to clear and cultivate the land. Families that towards the end of the 19th century descended to the plains, where it was easier to conduct productive and commercial activities. This is what the Poli family did, and in the space of five hundred years, from their native Gomarolo, they moved three times, covering a total of eighteen kilometres, to get to Schiavon, where they still reside today. A craft distillery founded in 1898, it is the only Italian distillery selected by Lonely Planet as one of the 10 craft distilleries in the world worth visiting.
Description
A young Grappa made from a variety of grapes whose characterising vines are Merlot and Cabernet. This Grappa was conceived in 1983 with the aim of a Grappa that would encapsulate the aromas of tradition, but without having the typical faults of old-fashioned, pungent, aggressive and oily Grappas. It took time to work out which grape varieties to use, and after several trials I settled on the timeless Bordeaux blend, that blend of Cabernet Franc, Cabernet Sauvignon and Merlot that gave rise to the best wines in the world, those of Bordeaux. Its name 'sarpa' is simply the pomace, that is, the skin and seeds of the grape, the raw material from which Grappa is made, a term very dear to the people of Vicenza.
Organoleptic characteristics:
Colourless transparent. it has a robust, almost rustic character, pleasantly herbaceous aromas reminiscent of freshly cut grass, a vinous aroma and red flowers such as geranium, rose and violet, making it a timeless classic.
