Cellar
Billecart-Salmon is a French Maison with a history of more than two hundred years, located in Mareuil-sur-Aÿ. It was founded in 1818 by Nicolas François Billecart and his wife Elisabeth Salmon. It is the story of a family, because Elisabeth's brother Louis Salmon is also passionate about oenology and participates in the production of the wines. And so it is that, after seven generations, the whole family still contributes to handing down the tradition, remaining faithful to an unchanging commitment: 'Prioritise quality, aim for excellence'.
Description
The Brut Réserve unchanged since 1945 is a champagne made from a blend of three vintages from the best terroirs of the Marne: Pinot Noir, Chardonnay and Meunier from 28 different communes. The Maison matures the wine in the bottle 'sur lies' (for at least 30 months before dégorgement), in a ramified and extensive network of chalk cellars dating back to the 17th and 19th centuries.
Organoleptic characteristics:
The pale golden yellow hue is characterised by fine bubbles and abundant, persistent mousse. The nose combines hints of floral freshness with hints of fresh fruit and ripe pears. A forthright and precise attack on the palate, followed by an exceptional sensation of freshness. A rich bouquet, the result of ageing in traditional cellars.
