Vallisto

The Vallisto winery was founded in 2010 in Cafayate, a city in the province of Salta, as the brainchild of three oenologists, Francisco Lavaque, Marcelo Pelleriti and Hugh Ryman, to produce high quality wines in Argentina from its flagship grape, malbec. In addition to malbec, vineyards of other important Argentine varieties such as pais and torrontés, the latter a white grape, are also recovered. The name 'Vallisto' is a tribute to the indigenous population of the Cafayate Valley. At the foot of the Andes mountain range, on particularly rocky terrain, the plants are located at very high altitudes, between 1,900 and 2,600 metres above sea level, and benefit from the exceptionally sunny climate. This characteristic climate, combined with the significant temperature fluctuations between day and night due to the presence of the Andes, create the conditions for optimal ripening of the grapes. In the wine cellar, ageing can take place either in oak barrels or in cement vats, depending on the labels to be produced, which are also carried out through minimal oenological interventions.
