Cantina I Mandorli was established in 2002 in the Upper Tuscan Maremma, more precisely in Suvereto, an ancient village of medieval origin in the Livorno area between the renowned Bolgheri area and the wild and unspoilt Maremma, thanks to Massimo Pasquetti who, after visiting a few hectares of land, was fascinated by the beauty of the Suvereto terroir and became its owner. In 2003, the first Sangiovese vines were planted in the north-east, and in 2004, the first Cabernet vines in the south-east. Massimo also wanted to undertake a new project in recent years and, having fallen in love with Pantelleria, he decided to purchase a hectare on the island, even producing a new bottle with the refrigerated grapes that arrived by ship. The land that hosts the vineyards is characterised by a rocky subsoil, rich in trace elements, and sunny, on which a constant breeze blows, enveloping the typical Mediterranean scrub that surrounds the vineyards, located about 300 metres above sea level and exposed on two plots: one to the south overlooking the Gulf of Portoferraio and the Island of Elba, and the other to the north overlooking the Tuscan hinterland. In the vineyard so much attention is paid, we work biodynamically, no pesticides and chemical fertilisers, green manure and biodynamic preparations, respect for production cycles and manual harvesting. In the cellar there is about what there would have been a century ago; modern technology is only used for hygiene and controls, the rest follows the natural process. Wood is used as little as possible, normal vitrified barrels are preferred, which are certainly less aesthetic (on the outside you can only see the cement protecting the glass core) but leave the wine to age only in contact with the glass, without releasing additional aromas. The wines follow spontaneous fermentations, are without added sulphites, unfiltered and have a unique finesse and delicacy, which emphasises the varietal notes intertwined with the typical Mediterranean scrub of the area
