Revì, a winery that finds its inspiration in bubbles. The name Revì derives from the toponym of the production area; an area that, according to legend, was devoted to the cultivation of a vine from which a superior, royal wine was obtained: the "Re vin", Revì. With extreme attention to the search for maximum quality and always maintaining a strong bond with the Trentino territory, Revì produces only TRENTODOC, the Trentino bubbles. Over the years, the passion that led to the birth of the company has also infected family members, and thanks to close collaboration there has been an increase in the number of bottles and types of TRENTODOC produced. Today Revì confirms its mission to be synonymous with excellence in the production of TRENTODOC. The founder is Paolo Malfer, who in 1982, after years of tests and trials in which he perfected the production techniques studied in school books, decided to found the winery. TRENTODOC is born first and foremost from the careful care of the vines; the grapes, ripe to the right point, are harvested by hand and immediately subjected to soft pressing, which allows only the flower must, rich in perfumes and aromas, to be obtained. This is followed by the first fermentation, which must take place slowly and at a low temperature so that all the aromatic components do not lose their characteristics of elegance and delicacy. The wine obtained from this meticulous process is ready to be transformed into the prestigious TRENTODOC. Thus begins the process known as 'classic method';

Description

The Brut Millesimato from Azienda Agricola Revì is the sparkling wine to uncork for every occasion. Elegance to the eye and the sip. The vines of these two varieties grow within the prestigious Trento DOC, an important denomination for the production of sparkling wine in Italy. After being harvested by hand, the grapes are immediately destemmed, and the berries are sent to the pressing stage. The must obtained from this operation ferments for the first time in stainless steel containers, while re-fermentation takes place, as per protocol for the production of Metodo Classico, in the bottle.

Organoleptic characteristics: 

Intense straw yellow with a very fine, persistent perlage. On the nose are floral notes and fruity hints of white-fleshed peaches. Hints of toasted bread and almond. On the palate it is balanced, with good acidity and very persistent, with a slightly savoury finish and citrus undertones.
