Pietro Sartori, the man of great personality, bought the first vineyard and villa, the future headquarters of the Sartori company, in 1898. From then on, the baton passed to his son Regolo, who made elegance the hallmark of Sartori wines. He was succeeded by Pierumberto and Franco, whose far-sightedness took a further step forward by signing an agreement with the Cantina di Colognola ai Colli. Through this exchange of knowledge between fathers and sons, a business grew and strengthened that has openness and inclusiveness as its hallmarks. All the way to the present day, with the current vision of Luca and Andrea Sartori.
Description
Regolo Valpolicella Ripasso DOC from the Sartori family is an intense and persistent red wine with a dry and velvety flavour. Produced from 60% Corvina Veronese, 25% Corvinone and 15% Rondinella grapes.
The characteristic feature of this wine is the subsequent 'ripasso' on the Amarone marc. During this second fermentation, the wine receives from the dried marc part of the characteristics that are proper to Amarone.
Organoleptic characteristics:
It has a bright garnet red colour. The nose has intense and persistent aromas, dry and velvety flavours of cherry and small red fruits.
In the mouth it is robust, slightly tannic and very harmonious.

Vinification
Second fermentation takes place during 'ripasso' on Amarone marc. Malolactic fermentation.
