The Ciavolich family is an ancient family of Bulgarian origin of wool merchants who, in order to escape the advance of the Saracen invasions, fled to Italy to the village of Miglianico (Ch) in about 1560. The transition to landowners had to take place during the 1700s. In 1853 Francesco Ciavolich built the first wine cellar in Miglianico, in front of his residence palace, which is now one of the oldest and most impressive in Abruzzo, where he vinified his own grapes from the surrounding land. Today, Chiara Ciavolich continues to cultivate in order to pass on an ancient history through wine, a red thread linking past, present and future. Territorial wines with contemporary vinification and respect for the variety of origin. Straightforward and clean and deep in spirit.
Description
The Pecorino grapes come from 1 hectare of Abruzzo pergola-trained vineyard planted on the Pianella estate around the year 2000 and from 1 hectare of 'counter-espalier'-trained vineyard on the Loreto Aprutino estate, planted in 2011. About 15,000 bottles are produced
Organoleptic characteristics:
Intense yellow in colour, hints of aromatic herbs such as rosemary, thyme, sage and peppermint are combined with light nuances of yellow-fleshed fruit. Savoury and mineral on the palate.
Storage time:
2-6 years
Vinification
The grapes are crushed, softly pressed and the must is fermented in temperature-controlled stainless steel tanks. At the end of fermentation, a small part of the mass is racked into 2009 French tonneaux for a short ageing period of 3 months.
