The Tenuta Rocca di Fabbri estate was established in 1984 on the initiative of Pietro Vitali, who, during his long experience in the world of antiques, had grasped the profound connection between artistic beauty, the harmony of the landscape and the area's food and wine traditions. He identified the Montefalco area as the ancient cradle of vine cultivation and winemaking, practices introduced by the French Benedictines but then lost after the mid-1500s. It was here that he wanted to replant vines with special cultivation methods, in order to obtain wines that had the fragrance of the perfumes of this land and the elegance of Gozzoli's paintings. The farm covers about 60 hectares entirely planted with vines, and its strategy is strongly focused on the production of Sagrantino, Montefalco Rosso and Colli Martani Grechetto. Annual production is around 150,000 bottles. Rocca di Fabbri has the privilege of vinifying exclusively the grapes produced in the company vineyards: grapes that can be processed as soon as they are picked thanks to the union between vineyard and cellar. For red wines, and Sagrantino in particular, the aim is to produce well-ripened grapes capable of expressing good structure. That is, the aim is to obtain sweet and not too astringent skins with complex tannins capable of giving further roundness to the wine.

Description

Wine produced at 100% from carefully selected Sagarntino grapes and subjected to a long maceration process, they produce this wine that has a very special perfume with a hint of spices: rich in texture, rounded off by the long maceration in oak, it has a splendid body that makes it appreciated with roasts, well-matured cheeses, and the rich dishes of the hunting tradition.

Organoleptic characteristics: 

Intense ruby red colour with violet hues Rich bouquet, very persistent aromas of blackberry jam and spices. Enveloping, structured and balanced taste, robust and elegant tannin. Finally, a mineral note can be perceived

Storage time: 

5-15 years

Vinification 

On the skins for about 20 days at a controlled temperature and with several replacements per day. Fermentation: in 50 hl stainless steel fermenters at 25°C Ageing: 12 months in steel, 18 months in wood (70% in oak barrels, 30% in barriques)
