The Dario Princic winery is a pearl in the foothills of the mountains that mark the border with neighbouring Slovenia, namely Oslavia . This delightful family-run winery was one of the initiators of orange wines in Italy. It has been farming biodynamically since 1988 when it sold its grapes to local producers. Then deciding to make a U-turn and start his own production, Dario founded his winery in 1993, the year he bottled his first wines. All his whites undergo a long pellicular maceration, ferment in open vats and age in used Slovenian barrels, resulting in super-complex, intense, flavourful and deep wines. Dario Princic immediately became one of the points of reference in Collio for the production of very traditional white wines, macerated on the skins, establishing himself in the oenological panorama of the area as a very talented winemaker, a craftsman of wine. 7 hectares of vineyards, on hilly limestone and clay soils, from which he produces no more than 26,000 bottles a year. So a small production of high quality, characterised by a unique style like no other. The vines are grown organically, with copper and sulphur, without any use of synthetic chemicals, and favouring low yields per hectare. Wines of great territorial expressiveness often described as 'moving'.

Description

Jakot is an impressive, extremely powerful orange wine made from pure Friulano 100% grapes from approximately 60-year-old vines. The yield per hectare is around 40 quintals, and is kept low in order to favour the quality of the fruit at the expense of quantity.

Organoleptic characteristics:

Chromaticity from amber tones. Ample, intense and complex nose of hay, citrus fruits, candied fruit and ginger, officinal herbs, chamomile and propolis, but also hints of ripe yellow-fleshed fruit and hints of sweet spices. The taste reveals good freshness and great flavour, as well as a slight tannic sensation on the finish.

Storage time:

4-5 years

Vinification

Spontaneous fermentation in open vats. Maceration on the skins lasts 20 days and maturation lasts 30 months in large barrels. No clarification or filtration follows.
