Cellar

The history of the wine cellar began 150 years ago, already under the far-sighted banner of eco-sustainability from the natural stone subsoil, it was later modernised and transformed into one of the most beautiful and tradition-rich private wine cellars in South Tyrol. It is here that Elena Walch wines are born, artfully created from the best grapes following a sustainable approach, with full respect for nature and the environment. a leading South Tyrolean family-run winery, a flagship of Italian wine production and internationally renowned. As a promoter of quality and innovation, Elena Walch has helped to lead the South Tyrolean quality revolution, thus earning a high local and international reputation. An architect by profession, Elena Walch married the heir to one of the oldest wine families in the region, bringing with her new concepts for modernising the traditional winery. Today, the company is run in the hands of her daughters Julia and Karoline Walch, the fifth generation of the family. The profound conviction that the quality of wine is born in the vineyard thus brings with it the will to work without compromise, respecting the individual characteristics of each vineyard. With 60 hectares under cultivation, Elena Walch ranks among the most important wine personalities in South Tyrol. The wines are distinguished by their character, elegance and distinct personality, combined with a high level of professionalism. The superb climatic conditions and the exceptional location of the estates result in fresh, fruity white wines as well as concentrated, smooth red wines.

Description

The cuvée 'Ewa', which stands for E-lena WA-lch, is a light and very fresh cuvée resulting from the combination of three grape varieties of great aromatic intensity. An excellent vintage favoured by a warm and stable summer that allowed the grapes to arrive at the winery healthy and with balanced values. A wine with beautiful fruit and surprising complexity and great structure.

Organoleptic characteristics:

Intense straw yellow, great olfactory impact, with floral hints dominated by rose, aromatic herbs such as sage and thyme, and spices. The sip is agile, fresh and elegant.

Storage time:

2-4 years

Vinification

The three grape varieties are vinified separately and the cuvée is made in spring. The grapes are soft-pressed, while only the Gewürztraminer grapes undergo a 6-hour maceration on the skins before processing. The must undergoes static clarification and is then fermented in steel tanks at a controlled temperature of 20°C. The wine then matures for several months on its lees in stainless steel containers.
