Vinification
bunches of the Minutolo variety are selected, have their stalks twisted and are left to dry directly on the vine. The bunches are then harvested and complete the drying process on crates stacked in suitable rooms with forced ventilation and humidity control systems. After drying, the grapes are pressed and vinified using the white wine method; it is aged in wood for two months before release.
