Description
At Avignonesi, the quest for excellence goes hand in hand with experimentation with Tuscan 100% winemaking processes. For this particular wine, Avignonesi has set aside steel and oak in favour of Tuscan clay. The name Da-Di was chosen to emphasise this particularity. The sediment you might find in this wine shows that it is made from pure Sangiovese with minimal intervention. The deposit is due to its high content of a natural antioxidant called quercetin, which is perfectly safe. This is not a defect, it is a characteristic of pure Sangiovese
Organoleptic characteristics:
Ruby red colour with garnet hues. The nose opens with a sweet spiciness: cinnamon and star anise accompanied by small red fruits such as raspberry and currant. The aromas are suave and well balanced. The entrance into the mouth is welcoming and harmonious. The silky tannin caresses the lips and paves the way for a body of medium density and persistence. The finish is the pinnacle of the encounter between freshness and sweetness.

Vinification
Vinified in 13 terracotta pots produced in Tuscany: 8 were made by Artenova in Impruneta and 5 by Laboratorio San Rocco in Torrita di Siena using clay from Monte Amiata. Manual punching.
