Castello Romitorio is a renowned Tuscan winery located on a hillside complex at the foot of Monte Amiata, in Montalcino in the province of Siena. The owner of the winery, famous painter Sandro Chia, after buying Castello Romitorio in 1984, dedicated many years to restoring the castle and planting new vineyards on its land, while at the same time building a modern, super-technological wine cellar, taking advice from one of Italy's best oenologists, Carlo Ferrini. After thirty years of work on the land, today Castello Romitorio is an internationally recognised winery, a specialist in Sangiovese and Brunello di Montalcino. The Chia family's commitment moves between tradition and the search for excellence, classicism and innovation.
Description
The Brunello di Montalcino Filo di Seta from the Castello Romitorio winery is an exceptional wine. The grapes were harvested by hand with scrupulous and rigorous selection in the vineyard near Castello Romitorio.
Organoleptic characteristics:
The nose has an elegant bouquet, a mixture of dark peony and violet petals, with hints of fresh cherry and strawberry. On the palate it is persistent and very evenly balanced, with enveloping, fine but definitely intense tannins.

Vinification
Fermentation takes place in cement vats, with a short initial period of cold maceration (below 20°C) with the skins for about 15-20 hours, followed by a higher temperature controlled maceration that can last up to 20 days. Malolactic fermentation starts naturally and lasts for about 10 days.
