AlipĂºs was born in 1999, as a project of the DestilerĂa Los Danzantes, with Don Joel Antonio and sons as its first producers, in San Juan del RĂo. It was born with the idea of creating a map of Oaxaca's mezcals, showing how the conditions in which each mezcal is produced - and thus distinct soils, waters and climates - affect the final product. AlipĂºs seeks to promote and develop awareness of traditional mezcal producers in Oaxaca, particularly of their knowledge and high-quality products. Current distribution and branding efforts have led to superlative reviews and increased economic development for traditional mezcal farmers, where previously there'was very little.
Description
Alipus Santa Ana is handcrafted from Espadin 100% agave, grown on limestone soils in a hilly area. Alipus Santa Ana comes from the village of the same name in Oxaca and is produced by the HernĂ¡ndez Melchor family in Santa Ana del RĂo. Santa Ana is located at 4000 feet, but many of the local agaves grow even higher. The result is clean, balanced, fruity and delicate mezcals. Their intense, floral, citrus notes make them suitable for all occasions.
Organoleptic characteristics:
Colourless, clear and crystalline. The nose expresses itself with herbaceous, citrus and slightly smoky hints. The palate is delicate, fruity and slightly sweet, but with a good minerality.
Storage time:

Vinification
The agave is cooked in an underground conical oven, and milling is by horse-drawn tahona. Tall thin pine vats are used for fermentation, which is spontaneous. Double distillation takes place in copper stills.
