Description
Aleatico Sovana Doc is produced on the Antinori Fattoria Aldobradesca estate located near the historic village of Sovana, in the interior of southern Tuscany, in the centre of what is known as "the Etruscan Tufi zone". Aleatico is an ancient variety and a passito wine from the Tuscan tradition, it finds in this terroir, characterised by volcanic soils, a unique expression capable of distinguishing itself for its distinct personality and softness.
Organoleptic characteristics:
It is brilliant, with a ruby red colour. The nose is surprising for its delicacy: hints of
wild rose combine with fruity hints of cherry and plum. The palate is striking for its marked balance between
sweetness and freshness, with an aftertaste dominated by the typical varietal notes of rose

Vinification
The grapes at harvest were divided into two parts: one part was immediately vinified,
the other was left to dry for about a month, in dry, well-ventilated rooms, in order to obtain a greater
concentration, both in terms of aroma and structure. The vinification process was the same for both
the portions. After a gentle crushing, the grapes were transferred to stainless steel vats where the
maceration, which lasted about a week in order to extract the aromatic component as well as the typical colour.
The fermentation, which took place at a controlled temperature below 20 °C, was interrupted once the
desired sugar level by means of the sudden lowering of the temperature.
