Tenuta Fornace spreads over 80 hectares cultivated with passion in full respect of the balance of nature in different wine-growing areas of Oltrepò Pavese and Piedmont. Tenuta Fornace is the result of the dream of Andrea Rossi and his family, who already in the early 19th century cultivated grapes in the Oltrepò Pavese, where the cultivation of vines has millenary origins. The project is to be able to produce each variety and thus to set and raise each vine in the place most suited to it. From the very beginning we have chosen to conduct our vineyards by reducing interventions to a minimum and following what are now the rules dictated by organic and biodynamic farming, even before these were established. During the vinification phases, right up to the bottling of the wines, we do not add sulphites but only allow them to contain the natural ones that are formed in very small quantities during the fermentation phase. They do not clarify or filter the musts and wines but let the two natural physical elements, cold and time, take their course and are solely responsible for the natural decantation of their wines.

Description

This wine with its unique character is always derived from grapes from the estate's own vineyards, but above all it is the result of the union of two white wines that are the pearls of the two regions where the vineyards are located: Pinot Noir vinified in white obtained from the vineyards in Lombardy and Timorasso obtained from the other vineyards in Piedmont . Zio Timo & Zio Pino is the result of long personal research on my part in order to obtain an extremely long-lived wine, but with the simultaneous presence of a marked freshness and ample minerality and persistence. On the label
is shown as on each bottle a drawing by his daughter Alice in which the character on the left with the bright blue shirt represents the Pinot Noir, while the one on the right with the warmer, autumnal brown shirt represents the Timorasso.

Organoleptic characteristics: 

Straw yellow in colour, on the nose it has very delicate but persistent aromas on the palate it has a distinct freshness and ample minerality.

Vinification 

Alcoholic fermentation is only spontaneous and takes place exclusively with its own indigenous yeasts contained in the grapes, in steel vats and then aged for a few months on the lees in steel.
