The Antinori have dedicated themselves to the art of wine-making for more than six hundred years: ever since Giovanni di Piero Antinori joined the Arte Fiorentina dei Vinattieri in 1385.
For 26 generations, the family has always directly managed this activity with innovative and sometimes courageous choices, but always maintaining unaltered respect for tradition and for the territory.
Every vintage, every soil, every idea is a new beginning, a new search for ever higher quality margins. As Marquis Piero likes to say: "ancient roots play an important role in our philosophy, but they have never inhibited our innovative spirit".

Vinification
The fermented grape marc is transferred to the distillery immediately after emptying the fermentation vats (racking) and pressing. This procedure ensures that only the best pomace, rich in alcohol and especially in aromatic substances, is used for distillation.
