Ginepraio is a collaboration between Levante Spirits and Distillerie Deta. ENZO is a vine grower who lives in the town of Vespa - PONTEDERA, near Pisa, and his family produces organic wine in Montepulciano. Not far from MONTEPULCIANO, we find the Val Tiberina, a place famous for the production of tobacco and, above all, the world's best GENEPRO, the basic ingredient of gin. It is here, in southern TUSCANY, that Ginepraio was born.
Although Tuscany is one of the ITALIAN regions that needs no introduction, it is fascinating how, once again, its history manages to surprise us, knowing that the English have been buying juniper from the Val Tiberina for over 400 years.
GINEPRAIO wants to unite these paths and tell this story, which makes Tuscany a brilliant combination of culture, art, experience, tradition and EMOTIONS. The label shows the year of distillation, to underline the refinement of the product, almost as if it were a vintage. The 6 months of ageing are not accidental: they are meant to recall the average time of navigation of British Navy Ships, a time when embarked gin was crammed inside containers (such as amphorae or barrels) and packed close to gunpowder. The bottle of Ginepraio is reminiscent of a hospital drip, as in the past gin was used in the treatment of kidney and gastrointestinal diseases. "In christening it, we were inspired by the old adage 'getting into a quagmire' (also given the dictionary definition on the label), an informal way of describing a complicated situation from which it is difficult to get out. The same one we ended up in while searching for raw materials, all strictly certified, Tuscan and organic'.
Description
Gin Ginepraio is produced using the London Dry method. In the Amphora Navy Strength type, a part is cut at 57% vol. which is then left to rest for about six months in 300-litre earthenware Amphora, inside which, thanks to a micro-oxygenation of the Amphora, a superior organoleptic quality, greater structure and longer taste is obtained. Gin Ginepraio has the distinction of being the first distillate in the world to use this type of material and this type of Amphora for ageing.
All ingredients are placed inside a still, through which alcohol passes during the distillation process, extracting from the botanicals the oils and essences necessary to give GINEPRAIO its distinctive character. Seven botanical components are used in the production process, including three different types of Juniper (Chianti, Maremma and Aretino), giving three different organoleptic results. Juniper, dog rose and helichrysum, also known as 'semprevivo', are harvested in the Maremma, Val D'Orcia, between the province of Siena and Grosseto, and also in the Chianti area of Tuscany.
