Masseria Frattasi is an 18th century building, perfectly preserved by the owners, the Clemente family. At the foot of Taburno, which in Minoan dialect 'taurn' meant a mountain furrowed by gorges and canyons. The winery, founded in 1779 in Montesarchio, has been cultivating grapes for generations. The company currently has 30 hectares of vineyards and 10 hectares of olive groves, as well as woods and land located almost entirely in the mountains; it also cultivates vineyards in Anacapri and Baselice, and has some of the oldest vineyards in Campania; our cultivation methods are environmentally friendly. A winery that preserves pre-phylloxera vines even two centuries old and continues to produce grapes, a giant from which we obtain genetic material for new vines, old cultivars saved from extinction.

Description

From centuries-old vines, with plants that are up to two centuries old, pre-phylloxera, a cultivation system that for certain plants is a museum, the shoots tied with red willow, a grape variety that has its birthplace on these hills, and from here it is beginning its redemption, for its dizzying aroma and colour.
Caudium means tail, and foxtail has its chosen area in Cirignano, a hamlet of Montesarchio in the foothills. In Cirignano, the vine grows in difficult, poor areas without soil, on slopes steeper than the Moselle or the Val d'Aosta. Extreme viticulture. The label is an 18th-century votive shrine.

Organoleptic characteristics: 

To the eye, the colour is straw yellow with golden reflections, very fresh acidity, mineral flavour of flint, clear and persistent notes of plum jam.

Storage time: 

3-5 years

Vinification 

Cold pre-fermentative pellicular maceration. Soft pressing and temperature-controlled fermentation. Partial malolactic fermentation. Maturation in steel for three months and subsequent resting in the bottle.
